Sweet Potato Breakfast Bake

Sweet Potato Breakfast Bake

Servings: 2

Ingredients:

  • 2 Sweet Potatoes

  • 2 Tbsp Butter (or non-dairy equivalent)

  • 1/2 Cup Oatmilk/Regular Milk

  • 2 Eggs

  • 4 Slices Bacon OR 1 Cup Sliced Portabella Mushrooms

  • 1/4 Cup Feta Cheese

  • 1 Avocado, sliced

  • Chives, for garnish

  • Garlic Chili Oil, for garnish

  • Salt & Pepper

Instructions:

  1. Preheat oven to 400°F/205°C.


  2. Once oven is hot, line a baking sheet and pop in your sweet potatoes for 40 minutes, or until fork easy goes through the potates.


  3. While sweet potatoes are baking, line a second baking tray with your bacon. When you have 15 minutes left on your timer, add your bacon to the oven.

    OR

    While your sweet potatoes are baking, wash and slice your mushrooms into strips. In a pan over medium heat, add some neutral oil and bring up to temp. Once up to temp, add your mushrooms and saute for around 15 minutes. Sprinkle some salt on your mushrooms to draw out moisture.


  4. Once your sweet potatoes have finished baking, remove both your bacon and sweet potatoes from the oven. Turn your oven down to 375°F/190°C. Wait 5 minutes for sweet potatoes to cool, then take your knife and slice only the skin of the potato lengthwise. You should be able to peel the skin off easily, but be careful with the heat.


  5. Add your sweet potato insides, butter, oatmilk, salt, and pepper to a medium sized bowl. Using a fork, mix until well combined.


  6. Take a 1.5 L baking dish or 8.5x4.5" bread loaf pan. Take your sweet poato mixture and spread the mixture until even into your baking dish. Lay down your strips of bacon or mushrooms on top of your mixture. Crack your eggs on top of the mixture, lightly salt and pepper eggs. Sprinkle feta over all of it. Pop into the oven for 15-20 minutes, or until egg is just runny and the egg white is set.


  7. Remove from oven, drizzle some garlic chili oil on top. Garnish with chives. While cooling, slice your avocado.


  8. Wait 5 minutes to cool and serve onto individual plates. Divide sliced avocado between plates. Serve and enjoy!
