Autumnal Brie & Delicata Squash Sandwich Bowls
It’s finally squash season and this delicious, hearty, flavourful brown rice bowl packs a punch with its heavy use of seasonal produce. Based off of my favourite lunch sandwich in Boston, this recipe is filling and satisfying with its sourdough croutons, warm brie, and spicy-maple-roasted delicata squash!
Bacon & Egg Breakfast Cups
Ready in 30 minutes, this easy, bite-sized breakfast is a great way to give you energy all day with its spinach and sun dried tomato base. The crispy bacon perfectly compliments the runny egg yolk, and is only enhanced by the baked feta topping the whole thing. It’s a low effort, high reward breakfast that’s perfect for a weekend or weekday! And did we mention it’s only about $1 per serving?
30-Minute Pasta Carbonara
The beauty of a good carbonara is in it's simplicity. Luckily for us, that makes it the perfect midweek meal! With only 6 ingredients(including salt & pasta!), it packs a bunch without being expensive. It's hearty and cozy while still somehow remaining light. This meal takes only half an hour from start to finish and only uses 1 pan! What more could you ask for?
Sweet Potato Breakfast Bake
Sweet potatoes are filled with complex carbs that really help jumpstart your energy! Whether vegetarian or not, this recipe has meat substitutes that have got you covered. And is any breakfast bake complete without some eggs? I think not! That extra protein will help keep you going all day, especially when you pair it with the avocado topping!
