Lasagna Grilled Cheese

Ingredients:

  • 1/2 Cup Leftover Red Sauce (recipe)

  • 4 Slices of Good Sourdough Bread

  • 4-8oz Mozzarella Cheese

  • Handful Argulua/ Chopped Kale / Spinach

  • Optional Several Basil Leaves, torn up / chopped

  • 1/4 Cup Butter

  • 4 Cloves Garlic

Instructions:

  1. Chop your garlic finely. Melt your butter in the microwave in a microwave safe container. Once melted, add in garlic and mix until well combined. Butter each slice of bread on one side only.


  2. Take 2 of your sourdough bread slices. Evenly divide red sauce, arugula, and optional basil leaves between the two slices. Top with mozzarella. Finish sandwich assembly by adding top slice of bread to each sandwich.


  3. Heat heavy-bottom pan over meadium-low heat. Once hot, carefully place your sandwich in the pan. Don't turn up the heat, both garlic and butter have very low smoking/burning points.


  4. Cook on each side for 5-6 minutes, or until the outside is golden-brown and the mozzarella is melted to your liking.


  5. Serve hot and enjoy!
