Bacon & Egg Breakfast Cups

Servings: 6

Ingredients:

  • 6 Eggs
  • 4 Slices Thick-Cut Bacon
  • 1 Small Handful Spinach, washed and destemmed
  • 1/4 Cup Sun Dried Tomatoes
  • 2oz Feta
  • 1 Tbsp Garlic Chili Oil
  • Black Pepper
  • Chives, for garnish

Instructions:

  1. Preheat oven to 375°F/190°C.

  2. Spray or grease your muffin tins. Take your bacon slices and line your first 4 muffin tins. Cut the excess bacon off so that there is no overlap. If there is overlap, the bacon will be too chewy and won’t cook correctly. Using your bacon off-cuts, line the remaining 2 muffin tins.

  3. Pop your bacon-lined muffin tray into the oven for 5 minutes, or until the fat is just rendering.

  4. Bake your skillet for 40 minutes, then broil on High for 2 minutes.

  5. Remove your bacon from the oven and put a thin layer of feta in each muffin tin. Once lined with feta, de-stem your spinach and layer on top of feta. Layer sun dried tomatoes on top of spinach. Crack an egg in each muffin tin. Top with remaining feta. Crack black pepper over each breakfast cup.

  6. Bake for 15-20 minutes, or until egg white is set. If you shake the muffin tray, your yolk should not wiggle much.

  7. Remove from oven and allow to cool for 5 minutes before removing from tins. I recommend running a toothpick around the bacon and the tin of each breakfast cup to help with easy removal.

  8. Top with garlic chili oil and chives. Serve hot and enjoy!
