Ingredients:
- 1lb/1kg Dried Pasta
- 3g Whole Peppercorns
- 4 Eggs
- 200g Pecorino OR Parmesan
- 4 Slices Bacon
- A Pinch of Salt

Instructions:
- Bring a large pot of heavily salted water to a boil and cook pasta according to instruction to Al-Dante.
- While the pasta is cooking on medium heat, roast your pepper for 5 minutes. Once roasted, finely ground them in a mortar and pestle until fine. Cube your bacon and fry them on medium heat until crispy.
- Once pasta is cooked add pasta and a large scoop of pasta water to a pan over medium heat. Add your cheese and pepper and mix until thoroughly combined. This should create a nice cheesy sauce. After the sauce is well combined, turn the heat off and add eggs and bacon. The heat from the pasta should cook the eggs to a perfect consistency!
- Divide between serving bowls. Top with extra shredded cheese, pepper, and optionally some fresh thyme. Serve hot and enjoy!
