It’s finally squash season and this delicious, hearty, flavourful brown rice bowl packs a punch with its heavy use of seasonal produce. Based off of my favourite lunch sandwich in Boston, this recipe is filling and satisfying with its sourdough croutons, warm brie, and spicy-maple-roasted delicata squash!
Sundried Tomato & Artichoke Shakshuka
Shakshuka is the quintessential midweek meal: it’s fast, it’s easy, and it uses very few perishable ingredients. This satisfying North African dish is the perfect way to satisfy you and keep you feeling full after a long day. In our twist on the tradition recipe, we’ve incorporated artichoke hearts, sun dried tomatoes, and avocado to help get a little extra nutrition and flavour into your meal! With the combination of deep, rich tomato sauce alongside the perfectly poached eggs, we can’t think of a better way to spend a chilly night.
Orange & Bourbon Gingerbread Loaf
Every year, gingerbread cookies dominate the holiday scene. The unsung hero of Christmas desserts is a heavily spiced gingerbread loaf with a large scoop of vanilla ice cream on top. This loaf is infused with ginger, orange, zest, and bourbon, the perfect combination to warm you inside and out on a cold snowy night. This moist cake is made only better with the strong winter spices that come through with every bite!

As the air gets crisp, we thought there was no better time to lean into the first cozy meal of autumn. The pumpkin & goat cheese risotto is the epitome of a rainy day meal by being rich, creamy, and low effort. Although risottos can be intimidating, they’re actually a really easy way to feel fancier without very much effort. The spicy candied walnuts along with the acidic microgreen salad keep this meal from being too heavy and makes this a meal you can just keep eating until it’s gone.

Packed with nutrients, it keeps your going all day while still giving you the caffeine kick you're looking for. No one likes dishes, so we're utilizing our favourite kitchen tool, the cast iron pan, to keep your dishes to a minimum! Oh, and did we mention that it takes less than an hour?
Lemony Chickpea & Sundried Tomato Pesto Pasta
This AWESOME pesto pasta recipe brings in the best of summer by incorporating not only basil, but lemon and sun dried tomatoes! These crispy lemony chickpeas help give it some crunch and lift the dish to keep it from feeling heavy. It has everything you need to keep you going all day. And the best part? It only takes 45 minutes (which is mostly just boiling water) and only uses 2 dishes!
Dumpling & Broccolini Spicy Noodle Soup
This spicy noodle soup has a little bit of everything to give you a great dinner in only an hour. The roasted broccolini gives a depth of flavour and a texture that compliments the steamed dumplings and crispy tofu. It's a great way to spend the evening and with a variety of things to be made, it's a great way for a household to be able to cook together. When you're all done, this dish also make makes great leftovers(although it does get spicier)!

It takes 45 minutes and all you need are 2 sheet pans and a rice cooker. An easy clean up and a fast dinner that will keep your energy up all day. A mid-week delight, nothing beats a lasagna! It only takes 45 minutes and gives you enough leftovers to last you the next few days. Feeling extra ambitious?
