Peanut Butter Swirl Brownies

Ingredients:

  • 1/4 Cup Dark Chocolate Chips (65%+ Cocoa)
  • 1/2 Cup Canola Oil
  • 1/2 Cup Golden/White Sugar
  • 1 Tsp Vanilla
  • 2 Eggs OR 1/2 Cup Non-Dairy Yogurt + 1/4 Tsp Baking Powder for VEGAN OPTION
  • 1/2 Cup Flour
  • 1/4 Cup Cocoa Powder
  • 1/4 Tsp Salt
  • 3/4 Cup Peanut Butter
  • 1 Large Handful of Peanuts, roughly chopped

Instructions:

  1. Preheat oven to 350°F/180°C.
  1. Take chocolate chips and put in a microwave in Microwave Safe Container. Melt at 10 seconds interval until liquid. Set aside to cool down to room temp.
  1. In a large bowl, mix oil and sugar until very well blended. Add in melted chocolate chips, make sure this is room temp and not hot or it will cook your eggs. Add eggs and vanilla, stir until just blended.
  1. In a seperate bowl mix together all dry ingredients. Combine with wet ingredients until just blended. Add a small handful of loose chocolate chips and 3/4 of your chopped peanuts into the mixture. Give that bad boy a quick stir to integrate.
  1. Grease the inside of your 9x9" / 1.5 L pan. Sprinkle some flour in and do your best to lightly coat the grease. Dump out excess flour. Pour batter into your baking pan.
  1. In a microwave safe container, heat your peanut butter in 10 second intervals until liquid. Pour peanut butter over the top of your brownie mix, swirl gently with a knife or shopstick but don't stir it into the batter. Top with the rest of your chopped peanuts and a couple extra chocolate chips.
  1. Bake for 12-15 minutes, until moist but not gooey. Allow to cool for 10 minutes. Serve warm and enjoy!
