Autumnal Brie & Delicata Squash Sandwich Bowls
It’s finally squash season and this delicious, hearty, flavourful brown rice bowl packs a punch with its heavy use of seasonal produce. Based off of my favourite lunch sandwich in Boston, this recipe is filling and satisfying with its sourdough croutons, warm brie, and spicy-maple-roasted delicata squash!
Sundried Tomato & Artichoke Shakshuka
Shakshuka is the quintessential midweek meal: it’s fast, it’s easy, and it uses very few perishable ingredients. This satisfying North African dish is the perfect way to satisfy you and keep you feeling full after a long day. In our twist on the tradition recipe, we’ve incorporated artichoke hearts, sun dried tomatoes, and avocado to help get a little extra nutrition and flavour into your meal! With the combination of deep, rich tomato sauce alongside the perfectly poached eggs, we can’t think of a better way to spend a chilly night.
Charred Kale and “Meat”balls over Coconut Noodles
This noodle dish is the perfect thing for a quick, cozy evening to yourself. It’s got the salt, acid, and heat to keep you feeling full and satisfied. The spicy “meatballs” go perfectly with the crispy, soy sauced kale, and are both balanced out by the creamy garlic coconut noodles.
Lemony Chickpea & Sundried Tomato Pesto Pasta
This AWESOME pesto pasta recipe brings in the best of summer by incorporating not only basil, but lemon and sun dried tomatoes! These crispy lemony chickpeas help give it some crunch and lift the dish to keep it from feeling heavy. It has everything you need to keep you going all day. And the best part? It only takes 45 minutes (which is mostly just boiling water) and only uses 2 dishes!
Homemade Pesto
Not your most traditional pesto, this version contains a huge iron boost in the form of kale. And instead of pine nuts, we feel it's much more accessible to use walnuts. They're fatty, rich, and full of nutrients at a much more achievable price point. This pesto is light and bright, just like this great weather we're having!
Mid-Week Lasagna
A mid-week delight, nothing beats a lasagna! It only takes 45 minutes and gives you enough leftovers to last you the next few days. Feeling extra ambitious?
