The Big Salad

Servings: 2

Ingredients:

  • 1 Small Bunch Kale

  • 1 Avocado

  • 12 Chocolate/Cherry Tomotoes

  • 1/2 Cup Feta

  • 6 Tbsp Balsamic Vinegar

  • Large Handful Pine Nuts

  • 1 Tbsp Walnut Oil

Instructions:

  1. Fill a bowl with warm water, but not hot or you risk blanching your kale. Fully submerge your kale and gently massage the leaves for about 30 seconds. This may sound odd, but it softens the texture and removes the bitterest elements of the leaves. Remove from water, de-stem, and roughly chop your kale. Dry as much as possible and put in your serving dishes, pour balsamic vengar over leaves.


  2. Half your avocados and cut into cubes. Rinse and quarter your tomatoes. Crumble your feta.


  3. Divide ingredients between serving bowls. Garnish with pine nuts, splashing walnut oil over pine nut clusters.


  4. Serve and enjoy your Big Salad!
